Happy St. Patricks Day! Here is how we celebrated, we had green milk, made a St. Patricks day shamrock crown and took a trip to the park! Oh yeah, and don't forget the Irish shirt on the red haired fair skinned boy! How much more festive can you get! Hehe! Enjoy the beautiful weather!
At our house we've, or I should say Payton has, been on a Horton Hears a Who kick. He loves it! He watched the movie at Papa and Grammas when we were there last weekend. Actually, he watched it every night while going to bed. We borrowed it from them and have watched it numerous times a day. For his first birthday Nonny and PopArt got him a Horton stuffed animal (whom he calls "WHO") and Horton Hatches An Egg book. He never really showed interest in it before, until now. So that's what we've been doing. Reading the book over and over, playing with his Horton stuffed animal and watching the movie. He's obsessed! But who doesn't love Dr. Seuss and a kid who loves books and to be read to, so we're not complaining! Stay as long as you want "Who"....
So I think this is one of the most wonderful recipes ever created. It came from a Kraft Family Food magazine that I get in the mail every once in awhile. It's mini meatloaf made in muffin tins! We've had it twice now. You take ground beef, a package of stuffing mix, 1 cup of water and 1 tsp. of garlic powder and mix it together. Spray your muffin tins with cooking spray and fill each hole with the meat mixture. Take a spoon and make an indent in each meat mixture. Put a littleBBQ sauce in each hole. (I make half with BBQ sauce and half with ketchup cuz I like ketchup and the boys like BBQ sauce.) Bake in the oven at 375 degrees for 30 minutes. Top with cheddar cheese and bake for 5 minutes and that's it!! It's delicious, really try it! And it warms up great!
